- 2 Cloves
- 2 Cardamom Pods
- 4 cups Water
- Salt, to taste
- 2 tbsp Ghee (Clarified Butter)
Instructions:
Step 1: Wash the rice and dal separately and soak them in water for 30 minutes.
Step 2: In a pressure cooker, heat ghee and add cumin seeds, bay leaves, cinnamon sticks, cloves, and cardamom pods. Sauté until fragrant.
Step 3: Add the chopped onions and green chillies, and sauté until the onions turn translucent.
Step 4: Add the chopped vegetables, turmeric powder, red chilli powder, and salt. Sauté for a few minutes.
Step 5: Drain the water from the rice and dal, and add them to the pressure cooker. Stir well to coat the rice and dal with the spices and vegetables.
Step 6: Add water to the pressure cooker and stir well. Close the pressure cooker lid and cook on high heat until 3 whistles.
Step 7: Turn off the heat and let the pressure release naturally.
Step 8: Open the lid and stir the Khichuri well. Adjust the consistency by adding more water if required.
Step 9: Serve hot with a side of pickles, papadums, and yogurt.
