Ingredients:
- 1 cup of Gram Flour (Besan)
- 1/2 cup of Semolina (Sooji)
- 1 cup of Yogurt (Dahi)
- 1 teaspoon of Salt
- 1 teaspoon of Sugar
- 1 teaspoon of Ginger Paste
- 1 teaspoon of Green Chilli Paste
- 1 teaspoon of Eno (fruit salt)
- 1 tablespoon of Oil
- 1 tablespoon of Mustard Seeds
- 1 tablespoon of Sesame Seeds
- A handful of Curry Leaves
- A pinch of Asafoetida (Hing)
- 1 cup of Water
- Coriander Leaves for garnish
Step 1: In a mixing bowl, combine the gram flour, semolina, salt, sugar, ginger paste, green chili paste, and yogurt. Mix well to form a smooth batter. Add a cup of water gradually to make a thin batter with no lumps.
Step 2: Grease a Dhokla plate or a round pan with oil and keep it aside.
Step 3: Heat a steamer on medium flame. Meanwhile, add eno to the batter and mix well. Immediately pour the batter into the greased plate, and spread it evenly.
Step 4: Place the plate in the steamer and cover the lid. Steam the Dhokla for 15-20 minutes on medium flame or until a toothpick inserted comes out clean.
Step 5: Once the Dhokla is cooked, take it out of the steamer and let it cool for 5 minutes. Then, cut the Dhokla into desired shapes.
Step 6: Heat oil in a pan and add mustard seeds, sesame seeds, curry leaves, and asafoetida. Allow them to crackle and splutter for a few seconds.
Step 7: Pour the tempering over the cut Dhokla pieces, and spread it evenly.
Step 8: Garnish the Dhokla with coriander leaves and serve hot with green chutney or tamarind chutney.
Special Tips:
- Make sure to use fresh yogurt and eno for the best results.
- The batter should be of pouring consistency, neither too thick nor too thin.
- Always steam the Dhokla on medium flame, as steaming on high flame can make it hard and dense.
- Do not open the steamer lid frequently while the Dhokla is cooking, as this can cause the Dhokla to deflate.
- For a softer and spongier texture, you can add a teaspoon of fruit salt just before steaming the Dhokla.
- Use a toothpick to check if the Dhokla is cooked properly. If the toothpick comes out clean, it means the Dhokla is cooked.
- Adding a pinch of turmeric powder to the batter can give it a yellow color.
