Hyderabadi Chicken Biriyani Recipe 

 Hyderabadi Chicken biryani is one of the most famous and delicious biryanis in India. This biryani originated in Hyderabad, a city in the southern state of Telangana, and is known for its unique blend of aromatic spices and flavors. Hyderabadi biryani is usually made with long-grain basmati rice and either chicken or lamb meat. In this blog, we'll discuss the step-by-step recipe of making Hyderabadi chicken biryani and some special tips to make it perfect every time.

Ingredients:

  • 500g basmati rice
  • 1kg chicken/lamb meat
  • 2 cups yogurt
  • 2 onions, thinly sliced
  • 1 cup mint leaves
  • 1 cup coriander leaves
  • 4-5 green chilies, chopped
  • 2 tbsp ginger-garlic paste
  • 1 tbsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala powder
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 2-3 cloves
  • 2-3 green cardamom pods
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 tbsp lemon juice
  • 1 cup vegetable oil
  • Salt to taste

Step-by-step Recipe:

  1. Soak the basmati rice in water for 30 minutes. Drain the water and keep the rice aside.
  2. Heat the oil in a large pot and add the sliced onions. Fry them until they turn golden brown and crispy. Take them out and keep them aside.
  3. In the same pot, add the meat and fry until it turns brown. Add ginger-garlic paste, green chilies, and all the spices, and fry for a few minutes.
  4. Add the yogurt, lemon juice, and half of the fried onions to the pot. Mix well and let it cook on low flame for 30-40 minutes until the meat is tender.
  5. In another pot, boil 8-10 cups of water and add the soaked rice along with some salt, whole spices, and half of the mint and coriander leaves. Cook for 8-10 minutes until the rice is 70% done.
  6. Drain the rice and remove the whole spices. Layer half of the rice on top of the meat in the pot.
  7. Add the remaining mint and coriander leaves on top of the rice, followed by the remaining fried onions.
  8. Layer the remaining rice on top and cover the pot with a tight-fitting lid. Cook on low flame for 10-15 minutes until the rice is fully cooked.
  9. Serve hot with raita, pickle, and papad.
