- 1kg chicken/lamb meat
- 2 cups yogurt

- 1 tbsp red chili powder
- 1 tsp turmeric powder
- 1 tsp garam masala powder

- 2-3 cloves
- 2-3 green cardamom pods
- 1 bay leaf
- 1 cinnamon stick
- 1 tbsp lemon juice
- 1 cup vegetable oil
- Salt to taste
Step-by-step Recipe:
- Soak the basmati rice in water for 30 minutes. Drain the water and keep the rice aside.
- Heat the oil in a large pot and add the sliced onions. Fry them until they turn golden brown and crispy. Take them out and keep them aside.
- In the same pot, add the meat and fry until it turns brown. Add ginger-garlic paste, green chilies, and all the spices, and fry for a few minutes.
- Add the yogurt, lemon juice, and half of the fried onions to the pot. Mix well and let it cook on low flame for 30-40 minutes until the meat is tender.
- In another pot, boil 8-10 cups of water and add the soaked rice along with some salt, whole spices, and half of the mint and coriander leaves. Cook for 8-10 minutes until the rice is 70% done.
- Drain the rice and remove the whole spices. Layer half of the rice on top of the meat in the pot.
- Add the remaining mint and coriander leaves on top of the rice, followed by the remaining fried onions.
- Layer the remaining rice on top and cover the pot with a tight-fitting lid. Cook on low flame for 10-15 minutes until the rice is fully cooked.
- Serve hot with raita, pickle, and papad.
