Mutton Pulao is a popular South Asian dish that is made by cooking aromatic basmati rice with tender pieces of mutton and a blend of spices. This one-pot meal is hearty, flavorful, and perfect for feeding a large crowd. Here's a step-by-step recipe for making Mutton Pulao that's sure to impress your family and friends.
Ingredients:
- 500g Mutton, cut into bite-sized pieces
- 2 cups Basmati Rice, washed and soaked in water for 30 minutes
- 3 Onions, thinly sliced
- 4 Tomatoes, chopped
- 2 Green Chilies, slit
- 4 Cloves
- 4 Green Cardamoms
- 2 Black Cardamoms
- 1 Cinnamon Stick
- 1 Bay Leaf
- 1 tsp Cumin Seeds
- 1 tsp Coriander Seeds
- 1 tsp Red Chili Powder
- 1 tsp Turmeric Powder
- 1 tsp Garam Masala Powder
- 1/4 cup Yogurt
- Salt, to taste
- 3 tbsp Ghee
- 2 cups Water
- Chopped Coriander Leaves, for garnish
Instructions:
Step 1: Marinate the Mutton In a bowl, mix the mutton with yogurt, red chili powder, turmeric powder, garam masala powder, and salt. Cover the bowl and let it marinate for at least 30 minutes.
Step 2: Fry the Onions In a heavy-bottomed pot, heat 3 tablespoons of ghee over medium-high heat. Add the sliced onions and fry until they turn golden brown. Remove half of the fried onions and set them aside for garnish.
Step 3: Add Whole Spices Add cloves, green cardamoms, black cardamoms, cinnamon stick, bay leaf, cumin seeds, and coriander seeds to the pot. Fry the spices for 1-2 minutes until fragrant.
Step 4: Add Tomatoes and Green Chilies Add chopped tomatoes and slit green chilies to the pot. Cook for 2-3 minutes until the tomatoes are soft and the mixture becomes a thick paste.
Step 5: Add the Marinated Mutton Add the marinated mutton to the pot and cook for 5-7 minutes until the meat is browned on all sides.
Step 6: Add Water and Rice Add 2 cups of water to the pot and bring it to a boil. Drain the soaked basmati rice and add it to the pot. Stir well to mix everything together.
Step 7: Cook the Pulao Cover the pot with a tight-fitting lid and simmer for 20-25 minutes until the rice is cooked and the water is absorbed. Do not stir the rice while it's cooking as it may break.
Step 8: Garnish and Serve Once the rice is cooked, fluff it up with a fork. Garnish with the remaining fried onions and chopped coriander leaves. Serve hot with raita or salad.
Special Tips:
- Use good quality basmati rice for the best results. Soak the rice for at least 30 minutes before cooking to make it fluffy and separate.
- Marinating the mutton in yogurt and spices makes it tender and flavorful. You can marinate it overnight for even better results.
- Fry the onions until they turn golden brown as they add a lot of flavor and aroma to the dish.
- Use a heavy-bottomed pot with a tight-fitting lid to cook the pulao. This will ensure that the rice cooks evenly and doesn't stick to.
