Ingredients:

  • 500g Mutton, cut into bite-sized pieces
  • 2 cups Basmati Rice, washed and soaked in water for 30 minutes
  • 3 Onions, thinly sliced
  • 4 Tomatoes, chopped
  • 2 Green Chilies, slit
  • 4 Cloves
  • 4 Green Cardamoms
  • 2 Black Cardamoms
  • 1 Cinnamon Stick
  • 1 Bay Leaf
  • 1 tsp Cumin Seeds
  • 1 tsp Coriander Seeds
  • 1 tsp Red Chili Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Garam Masala Powder
  • 1/4 cup Yogurt
  • Salt, to taste
  • 3 tbsp Ghee
  • 2 cups Water
  • Chopped Coriander Leaves, for garnish

Instructions:

Step 1: Marinate the Mutton In a bowl, mix the mutton with yogurt, red chili powder, turmeric powder, garam masala powder, and salt. Cover the bowl and let it marinate for at least 30 minutes.

Step 2: Fry the Onions In a heavy-bottomed pot, heat 3 tablespoons of ghee over medium-high heat. Add the sliced onions and fry until they turn golden brown. Remove half of the fried onions and set them aside for garnish.

Step 3: Add Whole Spices Add cloves, green cardamoms, black cardamoms, cinnamon stick, bay leaf, cumin seeds, and coriander seeds to the pot. Fry the spices for 1-2 minutes until fragrant.

Step 4: Add Tomatoes and Green Chilies Add chopped tomatoes and slit green chilies to the pot. Cook for 2-3 minutes until the tomatoes are soft and the mixture becomes a thick paste.

Step 5: Add the Marinated Mutton Add the marinated mutton to the pot and cook for 5-7 minutes until the meat is browned on all sides.

Step 6: Add Water and Rice Add 2 cups of water to the pot and bring it to a boil. Drain the soaked basmati rice and add it to the pot. Stir well to mix everything together.

Step 7: Cook the Pulao Cover the pot with a tight-fitting lid and simmer for 20-25 minutes until the rice is cooked and the water is absorbed. Do not stir the rice while it's cooking as it may break.

Step 8: Garnish and Serve Once the rice is cooked, fluff it up with a fork. Garnish with the remaining fried onions and chopped coriander leaves. Serve hot with raita or salad.

Special Tips:

  • Use good quality basmati rice for the best results. Soak the rice for at least 30 minutes before cooking to make it fluffy and separate.
  • Marinating the mutton in yogurt and spices makes it tender and flavorful. You can marinate it overnight for even better results.
  • Fry the onions until they turn golden brown as they add a lot of flavor and aroma to the dish.
  • Use a heavy-bottomed pot with a tight-fitting lid to cook the pulao. This will ensure that the rice cooks evenly and doesn't stick to.

In conclusion, Mutton Pulao is a delicious and easy-to-make dish that can be enjoyed by people of all ages. By following these simple steps and tips, you can make a flavorful and aromatic pulao that is sure. Thanks for visiting Yum Yum Plates.
