Idli is a popular South Indian breakfast item that is enjoyed by millions of people all over the world. It is a healthy and delicious dish made with a combination of rice and urad dal that is steamed to perfection. Idli is easy to make and can be customized to suit your taste preferences. In this blog, we will take a look at the step-by-step process of making idli along with some special tips to ensure that you get perfect idlis every time.

Ingredients:

  • 2 cups idli rice
  • 1 cup urad dal
  • 1 tsp fenugreek seeds
  • Salt to taste
  • Water as required

Special Equipment:

  • Idli plates
  • Steamer pot

Step-by-Step Recipe:

  1. Soak the rice, urad dal, and fenugreek seeds separately in water for at least 4 hours. The fenugreek seeds will help to give the idlis a nice flavor.

  2. After 4 hours, drain the water from the rice and urad dal. Rinse them thoroughly with fresh water.

  3. Grind the urad dal in a wet grinder or a blender until it becomes a smooth and fluffy batter. This will take around 15-20 minutes. Make sure that the batter is not too thick or too thin. You should be able to see air pockets in the batter.

  4. Transfer the urad dal batter into a large bowl.

  5. Next, grind the rice in the same wet grinder or blender until it becomes a smooth paste. This will take around 20-25 minutes. Add water as required to get a smooth and thick batter.

  6. Mix the rice batter with the urad dal batter in the large bowl.

  7. Add salt to taste and mix well with your hands. This will help to incorporate air into the batter.

  8. Cover the bowl with a lid and let it ferment for 8-10 hours. You can keep the bowl in a warm place or in the oven with the light turned on.

  9. After 8-10 hours, the batter should have risen and become fluffy. Mix it well with a ladle.

  10. Grease the idli plates with oil. Pour the batter into the plates, filling them up to about 3/4th of the plate.

  11. Heat water in a steamer pot. Place the idli plates in the steamer and steam for 10-12 minutes.

  12. After 10-12 minutes, turn off the heat and let the idlis rest for 2-3 minutes. This will help to prevent them from sticking to the plates.

  13. Remove the idlis from the plates using a spoon or a knife. Serve hot with chutney and sambar.

Special Tips:

  • Use a wet grinder to grind the rice and urad dal for a smooth and fluffy batter.
  • Make sure that the batter is not too thick or too thin. It should be of pouring consistency.
  • Add salt to the batter just before steaming the idlis to ensure that they turn out soft and fluffy.
  • Ferment the batter for at least 8-10 hours for the best results.
  • Grease the idli plates with oil to prevent the idlis from sticking to the plates.
  • Do not overcook the idlis as this can make them hard and dry.
  • Serve the idlis hot with coconut chutney and sambar for a complete South Indian breakfast experience.
