Empanadas are a delicious savory pastry that originated in Latin America. They are filled with a variety of ingredients and can be baked or fried. In this blog, I will share with you a step-by-step recipe to make empanadas at home, along with some special tips to make them even more delicious.
Ingredients:
For the dough:
- 3 cups all-purpose flour
- 1 tsp salt
- 1/2 cup unsalted butter, chilled and cut into small pieces
- 1/2 cup cold water
- 1 egg, beaten (for egg wash)
For the filling:
- 1 lb ground beef (you can also use chicken or pork)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup pitted green olives, chopped
- 2 tbsp raisins, chopped
- 2 tbsp tomato paste
- 2 tbsp olive oil
Instructions:
In a large bowl, whisk together the flour and salt. Add the chilled butter and using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
Add the cold water, a tablespoon at a time, until the dough comes together. Knead the dough on a floured surface until it becomes smooth and elastic. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until soft, about 5 minutes. Add the ground beef and cook until browned, breaking up any large pieces with a wooden spoon.
Add the cumin, smoked paprika, salt, and black pepper and stir to combine. Add the tomato paste, green olives, and raisins and cook for another 5 minutes. Remove from heat and let cool.
Preheat the oven to 375°F (190°C).
On a floured surface, roll out the dough to 1/4 inch thickness. Using a round cookie cutter or a glass, cut out circles about 4-5 inches in diameter.
Place a spoonful of the filling on one half of each circle, leaving a 1/2 inch border around the edge. Fold the other half of the dough over the filling and press the edges together to seal.
Brush the empanadas with egg wash and place on a baking sheet lined with parchment paper.
Bake for 20-25 minutes or until golden brown.
Special Tips:
- To save time, you can use store-bought empanada dough.
- For a flakier crust, use half butter and half shortening in the dough recipe.
- If you want a spicier filling, add a chopped jalapeño pepper or red pepper flakes.
- To prevent the filling from oozing out while baking, make sure to seal the edges well.
